Pot Still vs Reflux Still: Which Should You Buy First?

The first still purchase is where most people get stuck, because the honest answer depends on what you want to drink, not on which design is better. The two designs solve different problems, and knowing which problem is yours settles the choice in minutes.

The Core Difference in One Paragraph

Both stills boil a wash and condense the vapour. The difference is what happens between those two events. In a pot still the vapour makes essentially one trip from liquid to condenser, so the distillate keeps a broad slice of the wash’s congeners: the esters, higher alcohols and aromatics that make whiskey taste of whiskey. A reflux still forces the vapour through repeated cycles of condensing and re-evaporating inside a column, and every cycle strips congeners and enriches ethanol. More reflux means higher purity and less flavour. Neither outcome is superior; they are opposite design goals.

The purity ceiling deserves one clarification: no still of any design exceeds the ethanol-water azeotrope, which sits near 97% ABV. A reflux column approaches it; a pot still never gets close, and is not trying to.

The honest hybrid answer: many flute and modular stills run either way, packed column for neutral, bypassed or unpacked for flavour runs. They cost more up front and remove the either-or entirely. If the budget stretches, a convertible still is the answer to this whole page.

The Mistakes Buyers Make

Buying reflux for whiskey. The most common regret. A column run at high reflux strips the very congeners a whiskey needs, and running a tall packed column at near-zero reflux is a clumsy pot still. Match the tool to the drink.

Ignoring boiler size. Design gets all the attention, but charge volume decides your batch economics. A 10 L boiler makes sample-sized batches; 25 to 35 L is the practical home sweet spot for either design.

Forgetting copper. Whatever the geometry, sulphur chemistry favours copper somewhere in the vapour path. All-stainless systems measurably carry more sulphury character, so stainless-boiler designs with copper columns or inserts are a sound compromise.

It can make a clean spirit after multiple runs and carbon filtering, but it will not reach true neutral. If vodka is the main goal, a reflux column is the right tool.

No. A thumper adds roughly one extra distillation stage and keeps plenty of flavour; a packed column adds many stages and strips it. A thumper is a pot-still accessory, not a purity device.

A pot spirit run typically collects hearts in the 60 to 75% range falling over the run; a reflux column holds output near 90%+ for most of the run. Both dilute to bottling strength afterwards.

Both are safe run properly and hazardous run carelessly. Fire and vapour management matter identically. Column stills add one specific caution: never run a packed column dead-ended without an open vapour path.
