How Chaptalization Works

Yeast converts sugar into alcohol at a roughly fixed ratio. A must's specific gravity (SG) reflects how much sugar it contains beyond water's baseline of 1.000 — the higher the SG, the more potential alcohol is available once fermentation finishes. Chaptalization adds sugar directly to the must, raising the SG before fermentation starts, so the same batch reaches a higher final ABV than the grapes alone would produce.

This calculator works out the gap between your current gravity and the gravity needed for your target ABV, then converts that gap into a sugar weight using the sucrose-to-gravity relationship: roughly 384 gravity points per kilogram of sugar per litre of must. The fermentation attenuation you select matters because a wine fermented bone dry converts essentially all available sugar to alcohol, while an off-dry style deliberately stops short, leaving some residual sweetness. The calculator solves for the starting gravity that gets you to your target ABV at whichever attenuation you expect.

Legal Limits and Regional Rules

Chaptalization rules vary enormously by country and region, and in many places by specific appellation. It is traditionally permitted, often with a defined maximum gravity increase, in cooler wine-growing regions including parts of France, Germany, Canada, the UK, and much of the US. It is restricted or banned outright in many warmer regions, including most of Italy, Spain, Portugal and Australia, where natural ripening usually provides enough sugar without adjustment.

For home winemaking well below any commercial appellation rules, this is rarely a legal concern. If you are making wine for sale, or working within a regulated appellation system, check the specific limits that apply to your region before adding sugar to a must.

For large additions, splitting the sugar into two or three doses over the first few days reduces the initial osmotic stress on the yeast compared with adding it all at once.

Dissolved sugar adds a small amount of volume, but this calculator treats the addition as negligible relative to the must volume, which is the standard simplification used at hobby and small commercial scale. For very large sugar additions relative to a small batch, measure your final volume after the sugar has fully dissolved.
